This week I made my famous cookies, converting them to wheat-free and gluten-free with two different flours from a local, Milwaukie company, Bob’s Red Mill.

Bob's Red Mill

According to it’s website:

Bob’s Red Mill Natural Foods produces more than 400 products, including a full line of certified gluten free products and an extensive line of certified organic products. With a wide variety of whole grain products, from flours and hot cereals to baking mixes and grains, Bob’s Red Mill has “whole grain foods for every meal of the day.”

For a wheat-free cookie, try oat flour. Or if you want to go completely gluten-free, try their quinoa flour.

Awesomely yummy.

Cookies serve an important purpose in our lives, from providing nutrients, to supplying comfort. Everyone has a favorite type of cookie. Some of us have favorite cookie recipes squirreled away, taken from the sides of boxes or bags of chocolate chips, or passed down from generations before and used on special occasions.

I spent about a year perfecting a no-sugar peanut-butter chocolate-chip cookie recipe when I decided to give up refined sugar. I was willing to give up the sugar, but no the cookies. I’ve linked to the recipe. Play around with cooking times to change the gooeyness of the cookie, and let us know if you make any awesome improvements!
