Unless you’re a vegetarian, chances are better than fair that you don’t know about quinoa. Which is a shame, because quinoa is pretty darn awesome.
High in protein, calcium and iron, quinoa looks like a grain but it’s actually closely related to beets, spinach and tumbleweeds. It contains an almost perfect balance of all eight essential amino acids, making it a complete protein. Quinoa is 12% to 18% protein and one cup will provide a child’s protein needs for one day.
I eat it with pesto, or a little cheese and salsa, or even with a bit of lemon pepper sprinkled over it. Yum.
