There are some foods we just consider essential: chocolate, cheese, olives, wine, and—for me—green chili.
Green chili goes with everything. Roast it up, skin it, slice it open and lay it over eggs in the morning, burgers at lunch and enchiladas at dinner. I put it in soups, stews, burritos.
Green chili is delicious. Divine, even.
Plus, it’s good for you. Ounce for ounce, green chili has more vitamin C than citrus fruits. According to Heidi Allison, author of The Chili Pepper Diet, chili consumption promotes weight loss. Eating chili peppers:
- Burns calories;
- Increases your metabolism;
- Curbs your appetite, especially for fatty foods and sweets;
- Releases endorphins that boost your mood.

Sounds lovely! I just came back from mexico last month and find myself addicted to these incredible enchilada recipes now!! Must go back next year sometime, I suppose, and this time head off the beaten path a little. Looking to reading more!
